Catch 27 Rolls Out Fall Menu Crafted By New Executive Chef Sebastian Sikora

ST. AUGUSTINE, Florida (September 17, 2026) – Catch 27 is making waves in the thriving St. Augustine culinary scene with the announcement of a new chef at the helm. The acclaimed restaurant is celebrating the appointment of Executive Chef Sebastian Sikora with a new Fall menu, available now. This updated seasonal menu features creative new dishes alongside the classic favorites die-hard fans have come to love. Owners Stephen and Lindsey Hutson are excited about the future but want to assure diners that Catch 27’s ethos of fresh, seasonal fare remains unchanged.

Chef Sebastian Sikora is a beloved local figure in Northeast Florida’s culinary landscape. Born in Chicago, IL, he attended high school in St. Augustine and began his culinary career working for his parents at The Black Knight Deli. He has managed restaurants throughout the area and served as a private chef for NASCAR, The Masters Tournament, and NBA Hall of Famer Michael Jordan. Chef Sikora’s culinary values focus on highlighting and elevating the natural beauty of whole foods. His creative process draws on his Polish heritage, Southern upbringing, French training, and love of global flavors. This combination shows up in his new shared plate, Georgia Devils, featuring plump dates stuffed with pimento goat cheese, wrapped in bacon, and brushed with local rosemary honey and balsamic glaze, as well as in the Fried Green Tomato Napoleon. Chef Sikora layers two crispy fried green tomatoes with pimento goat cheese and tops them with blackened shrimp and homemade Chow Chow. Two new entrees debut on the Fall menu: the Scallop & Lump Crab Ravioli, featuring housemade ravioli stuffed with jumbo lump crab, spinach, and ricotta, served with pan-seared scallops and finished with roasted red pepper cream, Chermoula, and butter-toasted pepitas; and the Orange-Ginger Glazed Salmon, served over succotash and roasted fingerling potatoes, topped with crunchy furikake. The menu also features Catch 27 staples like Deviled Eggs with Southern Fried Oysters, Seafood Gumbo Empanadas, and Coconut Curry Crab Cake.
